Confusedfarmer, the "white stringlike things" are the chalazae:

"The chalazae are two cord-like structures which keep the yolk centered in the egg.... The chalazae also function as an axis around which the yolk can rotate and keep the germinal disc uppermost at all times."

Yes my eggs have those germination disks in them 4 i broke open did.

I'd also wait acouple weeks to make sure your rooster is mating the hens, then check by looking in the cracked eggs for fertile verses nonfertile... you can then incubate when you have gathered enough to set.....

Bloodspots are also called meatspots and have nothing to do with being fertile...
