I just got a rooster from one of my good friends who had one too many he was the Beta rooster and tonight was his first night in their pen. since allowing him with the others, he does this little squat and foot shuffle. I haven’t had a rooster before, so I’m just wondering if this is a mating dance of some sort of what this means.

If he tries to do it to you put a stop to it. It shows a lack of respect for your authority over him. Doing it to his hens is normal and pretty funny to watch.
the hens! everytime they get close or approach him he starts doing his little “squat shuffle” 😅

It's either a mating-dance or he's trying to herd them. The herding version is more of a sideways-shuffle.

Also, so you're ready for it if you hear it, they make some pretty weird noises when flirting. Two ways they do it is by "tidbitting" or by scouting out nests.

The first is if they find something good to eat, they'll call the hen's attention to it by making this sort of gutteral, rapid-fire clucking sound while picking up the treat and dropping it repeatedly.

The second is if they find what they think is good nest, they'll crawl in it and make this weird growling sound. My more vocal rooster sounds like he's in pain. Then when the hens get close he'll start making this low growling noise. It sounds creepy as hell:
