But I want to know if I have a rooster, can I still gather eggs to eat? O_o In the concern of fertilized eggs vs. not.

Yup, you sure can eat them. Like said before, just collect every day, and they will be fine. They will only "grow" if incubated.

I want to eat some and hatch some naturally. If I notice a chicken going broody, I can move her to another coop to protect the wee ones right?

Yes, she shouldn't be in the general population when chicks hatch. That way, no one will hassle her or hurt the newly hatched babies. Less stress for her.
