Roosters in the garden

Hi, I live in a mild coastal climate and I have hatched chicks throughout the summer. Now I have some heritage roosters that I’d like to fatten up and slaughter. However I only have one coop. But… I do have a fenced in garden which I am not using until March. All I would have to do is make some temporary shelter. Does this make sense to do? Will it have negative impact on my garden for next year? Thanks for any advice.
