The national news is reporting a salmonella outbreak from a large egg producer. What can I do , as a backyard egg raiser, to reduce this threat to people who use eggs from my chickens. Most eggs I raise go to elderly friends and most have health issues.

What's tough is you can't control how people will handle the eggs once they're out of your possession. I mean, I've watched someone lick raw yolk off their fingers.

I only gift clean (but not washed) refrigerated eggs and insist they stay refrigerated until use. If I knew they were going to ignore that advice and leave them on the counter, then I would only offer fresh, clean (but not washed), unrefrigerated eggs.

You can also purchase stickers that have safe handling instructions, but I wouldn't count on anyone reading them.
