I have 3 hens. Two lay eggs with ever so slightly different hues of the same colour but my Easter egger’s vary a lot in colour. Is this common?

It sure is. They aren't machines. It depends on the pigments available in the uterus. That depends on the blood chemistry at the time.
Pigment, like virtually everything tangible is made up of chemicals.
The colors produced in the uterus are dictated by the genetics of a species and breed. What is produced still depends on the chemistry being available. That is largely dependent on nutrition. Changes will also happen due to stressors.
