Sanitation of and repurposing old chicken coop

I'm new here, and aplologize if this is not the right place. There are 3 chicken coops on our newly acquired property which we plan to use for chickens later. There is also a large chicken coop, more like a house. It's 24 x 35, and chickens were housed in the lower level and attic.
We are going to convert it to a kennel for dogs. So far, I have removed the manure from the concrete slab and attic. I am taking everything down to the studs and putting back PVC wall and ceilings. I will also be insulating it and installing HVAC.
My question is, what do I need to do to sanitize this structure once I have everything stripped to the studs? I want to make sure nothing is left behind that can make humans or dogs sick. Everything is covered with dust and dusty cobwebs, the exterior sheathing is OSB, and I just don't think pressure washing would be a great idea. I will however be pressure washing the concrete floor at some point and hopefully be applying epoxy.
