Hi....I had a customer ask me to save the heads and feet when we process our meat birds this week. I have never done this and was wondering if there is anything I need to do as far as cleaning them? Or do I just cut them off and save them? Any advice is appreciated. Thanks

I should add that she is using them to cook with.

I save mine but don't really clean them, but they are used for dogs so I don't know. Maybe just ask her what her preference is. Is she paying you for them?

I guess that would be determined by how much work you want to put into then. If she's a good customer, why not clean them up a bit. They don't have to be scrubbed or anything.

I don't know about the heads but if you are going to eat the feet you need to peal off the top scale layer first. I dip them in hot water and then it comes off pretty easy. Then I give them a good scrub.
