i am starting today collecting bourbon red turkey eggs for selling. how do i go about selling them? do i just put an auction on the sell forum now or do i wait till i have the eggs in hand then list? i want to sale 6 eggs plus 1 extra.
 
Depending on the rate of lay, I would post them up now, and explain that the eggs are still in the process of being layed. Let the bidder know what to expect and you can't go wrong.

You can also price them "per egg" instead of by the dozen. Let the buyer decide how long they want you to collect eggs before you send them.
 
I put an ad on Craigslist (I didn't want to get involved in shipping them). When someone responds, ask what they are interested in. Initially I had a dozen to sell and now the lady stops by once a week to buy what ever I have. I put a per egg price and a per dozen price.
