Setting up a compost pile

I have 6 new chickens which means poop and we have tons of dry leaves. I would like to set up a compost pile for my chicken poop. We will be using sand in the coop and run, sparse straw over the sand during the winter to keep footsies warm, shavings in the nesting boxes. How do I start a compost pile (maybe inside some chicken wire fencing on 3 sides)?

Here is what I am thinking. clean my droppings board and run each day and add to a pile. At the end of the week add an equal amount of dried leaves, lightly water, cover with a tarp, repeat same next week. Add coffee grounds here and there.

I wont have much for kitchen scraps because I am feeding my birds and 4 composting towers with my scraps.

Also, I will have some extra red wigglers from my towers, can i toss them right in the pile after the first week's layer of chicken poo, dry leaves and coffee grounds are piled.

I don't hardcore compost. I take out my chicken litter and horse manure from the barn and put it directly where I want to grow and let nature do it's thing.

I board my horse, but I am thinking I may clean her stall myself a few times a week and put the shavings and manure in a trash bag and bring it home. I'm at a very laid back barn but I am sure that will turn some heads, lol.
