I know that you acheive a black sex link when you breed a RIR rooster to a BR hen. Will it work with a dominique hen? Or can you only use BR?

Yes,
You can use a number of different types roosters not just a R.I. Red and either a Barred Rock, Dominique, Barred Holland, Barred Marans and I think Barred Leghorns also...

Yes, You can use any Barred/Cuckoo hens of any breed with any breed of rooster as long as he is Not Barred, Not Dominant White, and Not Recessive White masking barring.
