Be careful with any dairy product. It is not a normal feed for chickens. Only small amounts.
Have you had them check for worms? They might need a deworming.
As far as the protien and shelless I think it is miss information. I know many feed over 24% without shell problems. Protien is needed for feather and growth and helps restors energy in laying hens. I do not think most feeds have nearly enough calcium in them. Just think what it would take to make a baby everyday. Hens are doing that by laying. Up that. Another source too look at is dry cat food. It has more of what you need. I would go for the kitten formula for the hugher calcium. Only feed for a couple of weeks. This you would add to your normal layer.
You know after re reading your first post try this.... Change the water, cut out the well water. I am better that high iron is doing it. Get a filter you know the ones with a pitcher attached and pour your well water threw it. I forget what they are called. It seems to me you will need to start filtering that water if you want to use it.
