Shirataki Noodles ? UPDATE

I have not tried these but they are supposed to be great for dieting because they have very little in them.

Anyone use them?? I did a search and there were no hits here.

Okay, here's the "skinny" on Shirataki Noodles....

I found them at an Asian market in the refrigerated section...the noodles are packed in a plastic bag, floating in water. I purchased the House Foods brand which are called Tofu Shirataki....they are supposed to be the better tasting type. They come in Fettuccine, Angel Hair and Spaghetti shape. All my market had were the Fettuccine.

The package has two 4 ounce cup servings.

Nutritional Info per 4 ounce serving:

Calories: 20
Fat: 0.5g
Sodium: 15mg
Carbs: 3
Fiber: 2g
Sugar: 0
Protein: 1g
Vit C: 2%
Calcium: 10%
Iron: 2%

Ingredients: Water, Tofu, Yam Flour, Calcium Hydroxide (pickling agent)

No preservatives and you cannot freeze them. There will be an expiration date on the side, mine said MAR 10 2010, so I guess they are good for a month+ after purchase.

You have to rinse them really well, which I did because they do have a slight fishy smell (but no smell/taste after cooking). The instructions say to either parboil or microwave but I just cooked them in a skillet with a smidgen of sunflower oil. I also added 1/2 tsp of Pho Bo base, baby bok choy, carrots, green onion, cilantro and a tiny bit of garlic-chili sauce. I cooked it up quickly, stir-fry style....

......they were great!

The noodles DO have a different texture. My husband said they seemed slimy to him and they DID have a slick texture. Maybe if I had parboiled them they would have come out differently. So, dang it, I had to finish the whole dish!

They are made out of tofu and yam flour so, just like tofu, they absorb whatever flavor you mix with them.

I bought six packages and I plan on trying the hungry-girl.com recipe for Alfredo Sauce this week.

I'm not saying these are just like regular pasta noodles, but they were very satisfying to me and the best part is that my blood sugar this morning was about 30 points LOWER than it has been for the last several mornings.

We regularly eat the tofu noodles and Tammy has it right: YOU HAVE TO RINSE THEM WELL. Other wise they are just gross. My husband likes to nuke them for a little bit to "toughen" them up, so they are more like ramen. A chicken bullion cube and a bag of tofu noodles is a quick and easy lunch for work--but I think they are best in egg drop soup.
 
I know it's been awhile but do you still have the manual for your Grandma's #7 pressure cooker/canner? I can't find the manual anywhere & was hoping you could scan & send to me.
