Should I leave feed to my chickens all day?

I have 28 hens ,I soak my feed to allow it to ferment and then put two scoops out in two dishes I also have an arrangement with a local fruit stand and my chickens have access to fruits and vegetables all day . They also have a back yard to roam in and seem to be doing well . some are older flock, most are just coming in to laying age , am I doing ok ?
