Show me your Frozen Chicken/Freezer!!

I don't know what could prevent it... I kind of wondered with my own if it was because I use the broomstick method rather than slicing their neck and bleeding them, but I really don't feel like they hold more blood that way, even though some claim they do. I did rest them in ice water for three days too, so if they HAD extra blood, one would assume it would have leeched out. Perhaps if one soaked in salt water it would do more? Or not.
I do have some Cornish X in the freezer that I did bleed out, I'll dig them up and take a picture tonight if I get time. They are parted in pieces, but I'm sure that shouldn't really make a difference.

I dont think it's the method of kill because I sliced and bled out, then ice water for 3 days. I think it may have to do with them not being dry enough before the freeze. Perhaps I need to let them dry longer/more before bagging.
 
I think what you are noticing is the yellow fat in a home-grown bird. The birds you buy in the store have practically never even seen daylight, let alone fresh grass or a bug! My Cornish-X were also much older than the 42-day-old bird in the grocery store. The skin is a little thicker and more yellow fat under the skin, too. YUM, your bird looks great to me!

You probably do not have a professional freezer, which freezes very quickly. Home freezers do not get as cold and our frozen foods might have more & larger ice crystals than a commercial freezer. Tastes the same, might not keep as long. My food doesn't need to keep in the freezer for a year anyway!
