1 square foot is the minimum, but it's really not ideal to have happy birds. You should aim for the maximum space you can give.

What's the male:female ratio of each coop?

The problem is not the mutation you have, I have a pair of A&Ms that get along so well with each other and are really tame. If you were to get more pharaohs, you can't guarantee that they'd get along just fine. It's the individual birds.
 
I agree. I just sent a quail rooster off to freezer camp this morning because he wasn't what I wanted in my breeding covey, and he had reached full size.
Have you vent sexed them...there is no feather sexing with A&M's....boys will be boys lol.
 
I have not successfully vent sexed yet. With the ones that aren't feather sexable, as soon as I see one crow, a leg band goes on him.
About that i saw somewhere that red leg bands are bad for quail and button quail like red gets there attention so others will peck at it is that true ?
