Today was a butchering day as 6 souls departed this world for a better place.  Three of which were our ducks (pekin, cayuga, and a cambell).  I have prepared wild duck before but my wife isn't keen on eating it medium rare (my preference).  Does anyone have a good recipe for duck that cooks it to medium well?
