Skinless Duck Recipe

Today was a butchering day as 6 souls departed this world for a better place. Three of which were our ducks (pekin, cayuga, and a cambell). I have prepared wild duck before but my wife isn't keen on eating it medium rare (my preference). Does anyone have a good recipe for duck that cooks it to medium well? We skinned 2 of the ducks but left plenty of fat on them and pieced the 3rd (legs and breast).
 
I don't know of a recipe. I just wanted to say thanks for not killing the duck twice. I cooked for 11 years and it's amazing how many people want their duck breast cooked well done. Blahhh.

Best of luck finding a good recipe, I'm sure someone here has one.
My wife will try anything once, but she didn't like the "undercooked" duck. I think its all mental. Lol
