Yes, German Short-haired Pointer is valued as a bird dog in the US. Breed in my experience is not all that important.
I have had dogs, specifically dalmations, that were problematic around poultry, regular livestock and horses. All were broke of wanting to harass the other critters. Training required more interaction with other species not less and generally other activities had to be available in presence of poultry to provide a diversion. A key objective was to have dogs board with poultry which is possible. Having calm chickens like an old rooster helped. Same with livestock and horses.
I am not a professional trainer nor have I been trained myself in the training of dogs by a pro. I learned by bungling and often having dogs smarter than I am.
