There are two methods that can be used for smoking eggs. The first requires using a method called "cold smoking". The eggs are boiled, peeled and placed in a rack in the smoker and the temperature is kept at 100 degrees for 2 - 3 hours. The degree of smoke flavor depends upon the amount of time in the smoker and personal preferance.
the 2nd is a hot smoke technique where raw washed eggs in are placed in a smoker with an internal temperature of 180-200 degrees. The eggs are "cooked" for 4-5 hours. The smoke flavor will penetrate the shell and the egg will cook. You will have to maintain precise temperature and time records and test eggs at different cooking times to determine the exact time required.
