So I've been seeing references to 'breeding projects' and such; creating new breeds/colorations/bantam forms etc. and I was just wondering how it worked. Do you just up and decide you want a different colored chicken, or what? It seems like it could be a very interesting hobby.

If you decide that you want a chicken that doesn't quite exist, or you want a new color in an established breed, you set about to try to breed some. That's basically it.
