So many eggs!!!

I have 11 laying hens and I have so many eggs ahead we can't keep up with them. I tried to sell them and I have 2 customers that buy once a month, not enough when you're getting 77 eggs per week! I'm hoping with the colder weather arriving, my ladies will slow down a bit. In the meatime what to do? I found this idea and thought I'd share.

I've been making lots and lots of pasta. I use the bread machine to mix the dough, roll it through my pasta roller, and dry it in my dehydrator. I've made cookie dough and froze them in logs. That way I can take them out cut them into 12 pieces and bake fresh when we want a treat. Dutch pancakes use a lot of eggs and we make them once a week. I froze some. Sold some. It takes a bit of creativity to use up extra eggs, especially when you get so many a day
