So what's for breakfast?

Coffee and oatmeal with blueberries. Some turkey bacon I snagged from the kids breakfast.

Easy Egg Breakfast Casserole!

Here's the recipe. It is super easy, you can make it ahead and then just pop it in the oven until it sets up (20-30 min depending on how deep it is in the pan).

frozen hash browns (diced or shredded)
6 eggs (for a 9x9 pan) or 9-12 eggs( for a 9x13 or larger pan)
1 to 4 TBS pancake mix (1 TBS for every 3 eggs used)
1/2 cup to 3/4 cup milk (depending on size of casserole)
Diced onions, peppers, herbs, sea salt and pepper to taste (most any chopped veggie will do)
Chopped turkey bacon, or what ever cooked meat you have available (Meat is optional)
Shredded cheese (any kind will do) I LOVE FETA!

Spray No Stick inside of pan, coating all sides throughly.
Spread hash browns across bottom of pan to about half the depth of the pan.
In mixing bowl, beat eggs, add pancake mix and beat batter.
Add enough milk that batter is thick, but still pours easily.
Sprinkle your topping over the hash browns.
Pour batter evenly over the hash browns, and lightly press the mixture down in the pan so all ingredients are covered by batter.
Bake at 350 degrees for 20 minutes or until you can see slight browning around edges of pan or top of casserole.
Add the shredded cheese on top just a few minutes before you remove from oven.

Note:
The thinner the casserole, the quicker the baking time.
Let the casserole set out for 5 min, to cool slightly so it can firm up. Makes slicing a lot easer!
This recipe also works great for quiche.
Also works great to divide in portions and reheat for a packed lunch. Very Portable!

Homemade popovers and Greek yogurt with fresh/frozen strawberries (sweet'n low & vanilla)

(Lunch is going to be baked egg rolls-recipe I found for low cal egg rolls! Yum!!
 
I don't do breakfast for a few hours after waking up but not gonna eat ever again.

I was sick last night and I hate it.
 
Just now fixed 'breakfast' for my DGD and I.

Scrambled fresh eggs.
Bacon from the hogs we raised last year.
And busciuts.....bet you thought I was gonna say homemade! Nope, not me. Grands.
 
Raisin bran with milk mixed with vanilla cookie protein drink.
The milk fits in an exercise bottle and the raisin bran in a small ziploc bag fits in my backpack quite nicely.
It's all about packing things light and easily enough to fit on the bike. i.e. bicycle.
