I was wondering if people see if you follow and un-follow them? I think they can see when you follow them because I get alerts.....but how about if you are already following them and them un-follow them?

They won't get an alert if you unfollow them, but of course you will no longer be listed as a follower on their profile page, and they will get another alert if you re-follow them.

Also, one more question.

What happens when you delete someone elses post from your profile? Does it just disappear from you and other people can still see it, or does it leave your profile all together? Thanks!

Unless it was screenshot before you deleted it.
