i boil potatoes with onions. boil until almost mushy. add milk heat to almost boiling. i buy the already cooked bacon bits, velveta cheese and sour cream. mix it all together when its hot and make loaded baked potato soup.
boil peeled potatoes in chicken broth with chopped up carrots, celery, onion and a tied up bundle of fresh thyme and bayleaf . When veggies are soft take out the herbs and mash. add salt and fresh ground pepper. Add milk or cream to desired consistancy. Add cheese it you like.
2 potatoes, cubed up. Go ahead and put into boiling water to soften them up. Once softened (not mushy), pour out water and replace with milk on LOW setting so you don't scorch the milk. Put in some cheddar cheese (whatever comes in the bags), some bacon bits, I "think" a little bit of butter and bada-bing you're good to go.

I sometimes add green beans, maybe some fried sausage or fried hamburger, whatever I happen to have. And always fresh rolls. Cant beat that for a great dinner.
If you mean real easy, make your soup out of chicken broth, add instant mashed pot to thicken it. My mom is gluten free and I cook for all the Holidays so I have found many short cuts and instant mashed pot work for many things.
Bring to a boil four cups chicken broth, 4 cups diced potatoes, med onion diced, seasoned salt and pepper. Cook till fork tender. Now, in a blender put one 8oz block of softened cream cheese with a few ladles of your potato soup including some potatoes. Once smooth, add back into the soup. You could add anything you wanted. Last night, it was smoked pork chops! YUM!!
