Read post # 4. It is an automated process, but long ago when I was a kid the folks who ran the poultry farm adjacent to us hand candled all of their eggs. It's amazing how quickly experienced people can do things. Ever seen anyone sexing chicks ?

I find it hard to understand that commercial egg producers candle eggs when thousands are processed daily! Unless it is mechanized? Candling eggs is a time taking event.
