Sprouting Wheat versus Barley?

I've always bought barley to sprout for the chickens (especially in winter), but the last two bags of barley didn't sprout (probably too old). This time I bought a bag of locally grown wheat to sprout. Is there any advantage of using one over the other, nutrition, etc?
 
I plan on using wheat and rye. I guess I don't know what the difference is if there is any.
 
My understanding is that rye has more "antinutrients" in it, and is more difficult to digest. Both wheat and whole barley are good options, also sunflower seeds, and you can buy a product called "Plot Strike" or similar product which is bought and planted by hunters to attract deer. It comes in a mainly brassica formulation and a grain formulation. If you buy this, just be very sure it's not treated with any chemicals.
