I am trying to pick a good entry level incubator. So far the Hovabotor Genesis 1588 seems like a good option for me in terms of capacity and reviews. However, I would like to do staggered hatches. Is this possible? Would I need 2 incubators?

Yes you need two incubators. Although if you a cabinet incubator that wouldn't be necessary. I use a combo of my homemade incubator and a brinsea octagon 20 eco for hatching my eggs. The main reason you can't just use one incubator for staggered hatches is when they are hatching they need a much higher humidity which could lead to the developing embryos to drowned. One other thing to consider is that when they are hatching the hatching junk will get on the other eggs which would lead to bacteria entering the eggs.
