I'm new to everything, really. My first idea was to get a few straight run chicks along with a couple of older laying hens my thoughts were to offset the egg layers. After reading the I terwebs, I'm not so sure that that's a great idea.

Maybe some straight runners along with some pulleys will be better?
 
It depends on what you will be keeping chickens for. If it's for meat and eggs, then get straight run. If you do not plan on eating your chickens, then order pullets.

The thing is, when you order pullets, chances are you will end up with at least one cockerel anyway since sexing isn't 100% accurate, even with so-called auto-sex breeds. I ended up with two cockerels in two consecutive orders of pullets (My Pet Chicken), all of them breeds where boy chicks look distinctly different from girl chicks at hatch.
