Starting a Small Quality Hatchery in Northern Michigan...

I am starting a small hatchery in Northern Michigan. I currently have Lavender Orpington stock, White Legbar stock, and Cayuga duck stock, I plan to get some Lilac Turkeys in the spring to start a selection breeding operation with them as well. My question is... What are the breeds people in Northern Michigan and surrounding areas would like to see more of?

Chocolate Cuckoo Orpingtons are a large breed that I do well up here in the cold winters. I only have a rooster so I don't know how well of a layer they are.
