Stinging Nettles

Yes, you really can eat them, and they really are delicious. :)  I have eaten them myself, so I am not just guessing, here. On a farm where I used to live, they grew near a spring. After I tried them, I wanted them to grow in my garden, they were so good! But I could not get them to grow there, the conditions were not right I guess, so I was stuck having to walk to the spring to get them when I wanted them. I have not been able to find them here where I live now, alas.

Pick the young green leaves (wear gloves!!) and then drop them into boiling water. You don't need to leave them in there very long at all - 30 seconds is usually more than enough, but experiment to see what works best for your own taste. I don't like greens boiled to death so I don't have them in the boiling water very long at all. Discard the water of course. I like to put a nice red wine vinegar and butter on them. But they should be very tasty fixed your favorite way of preparing green spinach.

And yes, boiling them gets rid of the sting.
