I kid you not my in-laws are cleaning out their barn and they found some canning jars and with the empty ones there are 10 jars of string beens that look like they were canned yesterday. Great color and clear liquid. VERY pretty beans. I'm temped to carry a jar to be tested, just to see what happens. Being in the Raleigh-Durham area we are b.essed with more stuff than most area's. The jars were in a top loft of a barn and it had to been VERY hot in the summer and I know that there was one winter since then that was below zero but for how long? I need to take a picture and show you how PRETTY these beans are. Would yo even consider eatting these? I couldn't.

I wouldn't. But I bet they'd look great as a decor item on the mantle or something.

When we were cleaning out my grandmother's house, she still had several quarts of tomatoes in the cold room. She hadn't canned in YEARS, so heaven only knows how old they were! They looked fine, but I honestly wouldn't trust them to eat!

That is awesome though. It is amazing how well things can hold up over time.
