I am a chicken salad fanatic. I've recently slaughtered a bunch of chickens, and I just couldn't stand to make another batch of matzo ball soup with the leftover carcasses and meat, when I had the epiphany that I could nitpick the carcasses and make chicken salad!
I just boil the carcass for an hour or two, let it cool, then pick off all the goodies I missed when carving it up.
The best chicken salad, in my opinion:
-A pile of chicken meat bits
-A pile of finely diced apples
-A handful of chopped nuts (pecans or cashews are my favorites)
-Glob of mayo
-Pepper to taste
Mix it up, scarf it down!
