I have a swamp cooler that I got for my now not-greenhouse, and was wondering if it can be used in the coop on those horribly hot, dry desert summer days?

Yes!

I live central E. Tx. where commercial chicken farms are everywhere and what they all use are giant swamp coolers which are computer controlled to control the humidity and temp.
The problems you may run into is with the humidity being to high which promotes bacterial and mold growth, control this with trail and error and you have a great & safe way to to keep your birds cool and comfortable. In a desert environment it would be difficult for you to get the humidity to high unless it's a huge cooler in a small area

thanks Bill... it's a small cooler - I can pick it up. Coop will be around 10' x 7'.
