Swing a chicken around by its feet....

I was talking with my friend who lived in France for more than 20 years.

She said they would swing a chicken around by its legs just before whacking off the head. Apparently this made them unable to run around w/o a head afterward.
 
I don't buy it, the jumping around after decapitation is nerve related.
A word of advice, if you are planning on processing your own birds do not let them flop around it can cause bruising and broken bones.
Grab both feet and wings with one hand and chop the head off with another and do not let go after the deed is done, the movement subsides quickly
 
holding them upside down, or swinging them gently that way, does seem to kind of tranquilize them... I've been doing it with the meat birds before putting them on the stump for the axe. Does not stop the reflexive struggling movements after the axe falls though.

LOL ... the way she demonstrated was definitely no gentle swinging, but rapidly around at arm's length four or five times. She said this is the way it was done in Provence where she lived at the time.

Oh... and she felt she had to tell me: "Now just remember dear, you can't make blood sauce if you use this method".

Like I'm gonna even think about eating chicken-blood sauce!
