Switching From Commercial Chicken Feed?

Hi I'm new here. I have four hens, one of which started laying, and wanted to make a switch from commercial feed. Wondering what you guys are feeding you're birds.

I mix my own - rolled oats, barley and scratch grains (1:1:1) that is fermented. In the winter, I add fish food for extra protein to help with molts and egg laying. They also are turned loose every day to supplement with all the bugs and stuff they can find.
