I got a new incubator this year and have now successfully hatched three batches of eggs. But all of them have been about a day early.

Could a slightly hot incubator cause that? If so, what are other symptoms to look for?

All the hatches have been successful, so I am reluctant to make any big adjustments. Particularly if there are no other side effects.

A little warm can cause an early hatch, but there are other possibilities as well. Hens are pretty good at hiding eggs. It seems I always have early starters, some on-time and then the occasional late bloomer. If you've had 100% hatch rate, I wouldn't change a thing.

I used to call day two - day one, and still am not 100 percent sure. I believe day one is the day you set the eggs, and not 24 hours after. Is this correct?
As a general rule, the eggs should hatch on the same day of the week as when you set them. So, for example, if you set a batch of eggs on a Saturday, they should hatch 3 weeks later on a Saturday.
That being said, all of my hatches have also been a day early. One of my hatches was 100% hatch rate, and the second was 75%. Id say, if it works, then don’t change anything.
