Look at some references, photographs and also art you like. See how they look, try a bunch of things, and keep the techniques you like.

I usually start faces with a circle, then you can add a line or cross over it, to help stop it leaning too far to one side. Flipping your canvas or paper helps a lot too.

But, if you look, you can start with pretty much any shape, as long as it helps you build up a way to remember the form of the head and its measurements.
