Perhaps there are better methods but I thought this might be useful to some folks that have untame chickens. I have a couple of young chickens (who are looking more and more like roosters...grrr) that through various circumstances didnt get nearly as much hands on attention from a young age as the rest of our flock. Consequently these two chickens won't let us near them.
Well I stumbled upon a possible solution recently that I think may turn things around a bit. When it's getting dark and the chickens are laying down for the night they are quite docile, tame or otherwise. The two untame chickens let me just reach in the coop and pick them up with out a fuss. They cluck a little bit but other than that it's no problem.
