Tell me about saving hollyhock seeds

Help! I've never grown hollyhocks and all my garden books are packed away while I paint the den!
Someone gave me some hollyhock seeds, still in the heads. There are zillions of them; some are plumper than others and I'm assuming those are the more viable ones, but I'm not sure...
What should I be looking for in the seeds I want to save?
