Tell me About...Texas and New Mexico

If you've lived there/live there now/spent a good deal of time there, just want to here your general thoughts and impressions on these two states.

Some particular questions I have are do you feel the laws are reasonable or restrictive? Do you feel your rights are protected? Are you able to grow gardens or vegetables in your particular area? Do you feel like small time farming is supported by the community and the laws/government? What do you like? What don't you like?
