Temp and water wiggler question!???

I'm sure someone knows the answer to this question. If one thermometer reads 98.5 temp (very good thermometers) just sitting on top of the eggs but the probe that is in the water wiggler reads 99.5 is that okay. What temp should I go by anyway, the one in the water wiggler or what? Sometimes the therm. sitting one the eggs may read 100.1 while the other reads 99.8 in the wiggler. Usually the difference comes from opening it to add more water to the sponges. But I was curious about this. Any insight?
 
i tend to look at the water wiggler a little more, bc it showes a closer temp to the inside of the egg
 
My incubator temp is around 105 and the water wiggler temp is just over 80. I just put in the wiggler several hours ago. I assume I need to stay the course and let it set for another many hours so it can raise to the 'bator temp?

My incubator is running at 37.5c constant. Im having a little trouble with my humidity. 35-50% its hard to keep it constant 45%. Im using a cuvattutto 24 auto turn. Ive plugged the 4 vent holes with kitchen roll when I get it to 45 but it dips every night.
Should I give up with the water and leave it dry? or should I persevere? What can I do to keep it at 45%. I haven't opend the bator yet I drip water through a small hole.

Also when can I candle them? Or should I not bother?
This is my first attempt at incubating hence soooo many questions?

I use sponges to keep the humidity up vs. opening to pour in water and my humidity has yet been a big deal. I placed two new sponges in and recently started using 100% cotton to wick the moisture in vs opening the bater. I will post pics of that later.
