After fighting the on-board temperature sensor, I can't seem to make heads or tails of my data; so I decided to use an external sensor, the DS18B20.

I then hooked up my relay, a G5V-1-DC3. But the relay kept locking up. I was trying to using a CFL, but the inrush current was very high, and it exceeded the rating of my relay. I've also read that Halogen lights may cause similar problems, but I haven't tested these out. I was able to dig around and find an incandescent light bulb.
I made a few changes to the code, and I have my first home built incubator.
