My family's Easter tradition is eggs pickled in beet juice with onions. And since I have chickens, it is my job to make the pickled eggs.

I like soft boiled eggs

So does my wife. We have been married over 30 years and I had never made her one until last month. She was ill and I decided, why not. I had her talk me through it. Not as hard as I had imagined.

@MotherOfChickens, any chance you could share your recipe? Those look amazing and I have wanted to pickle eggs for a long time. I just have no idea how to do it.

I sure can! I measure out a can of beet juice adding water to make it a full cup. Then I add 1 cup of white vinegar. And 1 to 2 cups of sugar. 1 large onion and of course some hard boiled eggs poked with a fork. And I put it all in a large jar with the sliced beets. I repeat the beat juice/ vinegar/ sugar process until it covers my eggs. You can add more vinegar if you are like us, we love vinegar in my family lol
