well yesterday my mom decided to make pancakes for breakfast but noticed we only had one store bought egg left. Our cayuga hen Pepper has been laying an egg every few days, so i offered to go check her nest. I found three. One was cracked so we couldn't use it, the others were slightly slushie from the cold weather, but viable. So we decided to take the chance and use the slightly frozen ones and the one store bought egg. We had never used our ducks' eggs before and we havent had eggs in the longest time after the female was killed. We bought Pepper in December and amazingly, she started laying already despite the freezing cold and cloudy days. But little Pepper saved the day! We had amazing pancakes! and now my boyfriend can say he had duck egg pancakes! lol
 
Yes duck eggs are great! Wait until you start baking with them! Yummy! Way to go Pepper!

I agree that duck eggs are great!! I love baking with them. But, I have the hardest time convincing any of my relatives to try them. They love our fresh chicken eggs.
 
In what way are duck eggs better in baking? I've read this multiple times here on this forum, but never have I read an explanation of how or why they are better than chicken eggs. Please explain and thanks. I could be persuaded and then have to add a pair of ducks to our little flock and to decorate our pond. ~G
 
I bake constantly with duck eggs. Everything I bake with rises higher and is more moist with the duck eggs. I only use duck eggs for baking now. My neighbor down the road only buys duck eggs from me for baking as well. She buys them for her church bake sales. Everyone raves about her cakes and how moist they are. She said they ask what her secret is and she said she'll never tell them. LOL
