We prepped the birds tonight. We are having one of our home raised geese, but we got a call yesterday from one of our guests saying "Although I've never had goose I don't think I would like it, so can you just buy a small turkey, too?" So now we're cooking 2 birds.

The guest doesn't approve of butchering our own meat. He thinks it's... wait for it... UNHYGIENIC!!

I told aforementioned guest that they could bring all the vegetable dishes as payback.

Everything is homemade...my theme this year is "superfoods". I'm diabetic so that's why I use so much Splenda.

Roasted Turkey - Roasted with Carrots / Celery / Parsnips / Leeks
Gravy (low fat and using roasted veggies above)
Blue Mashed Potatoes
Sugar Free Maple Candied Yams
Spinach 7 Layer Salad - (spinach, celery, green peas, green onions, shredded carrots, turkey bacon and light Miracle Whip mixed with Splenda)
Fresh Corn - Shaved off Cob
Cranberry-Pomegranate-Quince Compote
Cornbread Stuffing - using medium grind cornmeal, pecans, dried cherries, water chestnuts and special sausage.
Leek-Walnut (White) Whole Wheat Muffins
