Are they long? What about weight? Do they sometimes hold their tails high/spread out? 

I'd say about a foot long. Pookie weighs twice as much easily as Pigpen and yes they hold their tails up and spread out sometimes. Look like white turkeys lol

Leghorns have big tails. (This is a full grown one.) They are also lightweight/lightly built and have a long body.

I'll go with them being leghorns... Lol
