Maybe what parts you ate growing up might have something to do with it? My parents always bought the whole chicken. They got the breast. I got the thighs, brother got the drumstick, and my sister loved the wings. I look at the wings as being a waste. I debone the cooked wings now and let the dog have the meat.
 
Oh ya I need to go back and look at your butcher pics. I wasn't sitting around the other day so wanted to wait till I had free time to really look.
Someone sent me a link to skinning and butchering the "easy way" I'll have to find it and post to see if you agree that's the best way to go about it. It does legs first but I'll skip that or maybe do those just for the dogs. I really only want the breast meat for myself.
A lot of my boys are past the fryer age so I'll probably try one and see what I think. If not tasty they may go to someone else that'll eat them.
I need to try the process and see if I have many young enough to be tasty. If the butchering isn't bad and they're not too old for my taste I'd rather go through them sooner rather then later so they aren't just getting older and feeding more.
If it works out I'll load up and eat them until next year's batches. It would probably be wise if I do that to get a vacuum sealer. Well unless they're crazy expensive.
If the roosters are past the fryer stage, slow cook them or pressure cook them into nice tender shredded chicken for soups, stews, chicken tacos, chicken salad, etc. I strongly recommend an Instant Pot. They are super easy and safe electric pressure cookers and you could probably find one on Marketplace. They make even the toughest old roosters nice and tender. Don’t let all that good breast meat go to waste. You are sitting on a deep freezer full of chicken breast meat! Do a few roosters every weekend until you get all the ones you need culled done. ✅

We feed the legs to the dogs too, as we only like the white meat. The dogs will eat raw chicken and turkey leg quarters quite frequently the new few weeks. lol
