I haven't looked at the temperature yet, but it is so humid that I'm already drenched. I've been harvesting cucumbers. I told my hubs that it's time to pull some vines. We could feed all of the state of Texas. He keeps saying he is going to garden on a smaller scale, but he gets a little carried away. The zucchini and squash aren't producing very well, nor or the eggplants or okra. The cherry tomatoes are suddenly overwhelming. I hate canning when it's this hot.
Does anyone have a recipe for a cucumber & tomatoe relish or salsa? One that can be kept in the freezer?

Can cucumbers be frozen? I’ve never given it a thought I guess.

I was thinking if I cooked them into a salsa? But it would probably be too starchy and mushy.

Good morning. Not making it to church but will watch on zoom. I love that they kept it going for us after starting it while covid was very active. Have a great Sunday.

I agree, mush would be the result. Sorry about the heat, I’m canning meat and am tired of it already
