The NFC B-Day Chat Thread

Tee hee, I feel like I am in the future .. sorry, no winning Lotto numbers but I do have a tip; if you can help it, avoid Monday morning; stay in bed! :p
I can't, I have to get up and feed the cats ;) and let the chickens out (*), give them their BOSS and give the alpacas their pellets. Oh the agony of getting up on Mondays (and every other day too) :lau

* Other than the "4 musketeers" that let themselves out the alpacas' "always open door" every morning. They greeted me at the front gate this morning at 8 AM. Which is better than when Mint greets me by the porch door. Cassie has been known to do that as well. 5'+ high gates are not match for at least 5 of the 2017 girls.

We still have Kmart here, but they've shut down their pharmacy and who knows how long before they go under.

KMart has a pharmacy? Who knew. The one that was by our prior home never did. It closed last year. We are getting a Target next year (at a different mall), first one in the state, last state to get one. We were the last state for a WallyWorld as well.

Any newbie laying for you yet?
Nope, though maybe Betty laid the egg DD2 found between the barns. Still not ABSOLUTELY sure it wasn't her but 52 g is pretty big for a first egg and it wasn't dark like Veronica's. BUT, I gather not all Welsummers lay dark brown. So either it was MAYBE one from Nuit (2 Y/O Black Australorp) though she's never missed the nest by 2' let alone 30' in the past or MAYBE Betty is going to lay eggs more the color of the White Rocks which aren't all that different from the BAs. Won't know for sure until I see her in a nest.

I need a good cheesecske recipe. I want to attempt a homemade one for Thanksgiving. My nephews are hosting this year and that should be memorable

Cheese Pie
Crust

18 graham crackers rolled to crumbs(1½ C any cookie) (35-40 nilla wafers, about 2\3 of an oreo package-remove filling)
¼ C sugar
5 tbs melted butter or Margarine

Filling
2(8oz) Cream Cheese
2 eggs
½ C sugar
1 tsp vanilla
Pinch salt

Preheat oven to 375 F. Mix crust ingredients and pat firmly into bottom an 1/3 of the way up the sides of a 9” spring form pan. Beat Cream cheese and sugar with a rotary beater or electric mixer until creamed. Add eggs, vanilla and salt and continue beating until satiny. Pour into crust. Bake 25 min. Cool in pan in oven with door ajar for half an hour to an hour. Remove from oven and cool to room temperature, and then cover with foil/plastic wrap and chill 10-12 hours before serving. Cut into slim wedges.

I like to top with Strawberry or raspberry sauce
